For salad:
- Romaine lettuce
- White or brown rice (optional)

- Chicken, steak, barbacoa, Avocado oil, carnitas, or sofritas (tofu)
- Fajita veggies (onions and bell peppers)
- Fresh tomato salsa, corn salsa, or spicy red/green salsa
- Shredded cheese
- Sour cream
- Guacamole
- Chipotle vinaigrette dressing (optional)
Recipe
- Put some salt, pepper, and your favorite spices on the chicken. If you’re using spicy spices, wear gloves.
- Put a little avocado oil into a pan. Cook the chicken on medium heat for 5–7 minutes on each side. When it’s fully cooked, cut it into small pieces and put it aside.
- Chop the jalapeno, red onion, romaine lettuce, and slice the avocado.
- In a small bowl, mix corn, chopped jalapeno, chopped onion, a little cayenne pepper (if you like spice), and juice from one lime. Add salt and pepper. Set it aside.
- Cook the rice (use a rice cooker for easy cooking). Add juice from half a lime and a little cayenne pepper. Mix in some salt and pepper.
- In a small bowl, mix Greek yogurt and hot sauce. You can add a little water to make it thinner if needed.
