Meet Chef Elena Castillo: The Mastermind & Heart Behind Our Chipotle Creations

Hi, I am Elena Castillo. Back when I was a child, I always liked eating food. I was a foodie. On every trip, I always tried different food, and one such food that I never tired of eating is Chipotle. The flavor, spices, and soul-satisfying taste of this food were the reason I never liked anything else.
I am a passionate culinary artist who has turned her love for Chipotle cuisine into a flavorful journey worth sharing with the world. I tried the Chipotle menus from different areas and found out what makes it the best-tasting ever. After several tries, here I am sharing my personal experience, recipes, culture, and techniques. My recipes and techniques will surely help you in making it at home.
A Culinary Journey Rooted in Tradition and Passion
I was born into a Mexican-American family. If you also belong to one, then you might agree that food is the centre of every celebration here. Most of my childhood was spent with my grandmother, and I learned the magic of seasoning and balance from my grandmother in her humble kitchen that is in San Antonio, Texas. Some of the memories that I shared with her are grinding dried chiles on a traditional molcajete, the aroma of roasted garlic filling the air, and learning the sacred rule of “never rush the flavor.”
These tips were the foundation of my culinary path. However, I didn’t stop there; I did multiple chef courses and completed my degree in the same field. I studied culinary arts, specializing in Latin and Southwestern cuisine. With the passage of years, I also traveled across Mexico and the American Southwest. Going there, my sole purpose was to collect flavors, techniques and stories that inspired me.
Why Chipotle?
I will not say that I don’t like other cuisines or tastes. Although I like Latin cooking a lot but the thing that inspired my heart was Chipotle-style cuisine. The taste of smoked Jalapenos, various salsas, customized burrito bowls, and the balance of seasoning is what I crave the most. The thing that started as a personal challenge to recreate my favorite Chipotle dishes at home quickly turned into a full-blown culinary mission. It became my mission to break down the restaurant favourites and transform them into easy and approachable recipes that everyone can try at home.
