  • 1/2 cup chili powder 47g 
  • Guajillo Chili
  • Ancho peppers
  • 2 Roma (plum) tomatoes chopped
  • 1/4 cup cider vinegar 
  • 3 cloves garlic
  • 2 tbsp brown sugar 
  • 1 tsp oregano 
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1/4 tsp cinnamon
  • 1/4 tsp black pepper
  • 0.5 tsp allspice
  • 6 tbsp olive oil
  • Brown sugar

Note: The Quantity of the ingredients depends on how much you need the adobo sauce. 

Chipotle Adobo Sauce Recipe

Here are the step-by-step instructions on how to make chipotle sauce:

Step 1: Remove Seeds

There are always seeds in the chilies. So, remove the seeds from guajillo, ancho peppers, and arbol chiles.

Step 2: Toast Chilies

Cook these chilies with black pepper with bay leaves under medium heat for 2 or 3 minutes. You should cook until the spices start to fragrance, and also be careful with chilies. 

Step 3: Blend Chilies

 Put the chipotle chili in adobo sauce and spices into the blender with the boiling hot water. Soak them for some time until the chiles are hydrated and soft.

Step 4: Basic process 

Heat the olive oil or your favorite oil over medium heat. After some time, like 2 minutes, put the onion and garlic into the oil, and cook them. You need to cook it until the onion becomes brown. 

Step 5: Heating
